Banana Bread

I promised (okay, mentioned) that I would post the recipe for the banana bread Jaren and his companion took to some of their investigators. Well, today is your lucky day!  The recipe is as follows:

1/2 cup shortening
1 cup sugar
2 eggs
3/4 cup ripe banana, mashed
1 1/4 cups flour
3/4 tsp baking soda
1/2 tsp salt

Cream shortening and sugar until fluffy.  Add eggs, one at a time. Stir in banana. Combine dry ingredients and add to mixture. Mix well. Pour into greased bread pan. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted into middle comes out clean.  

I usually double this recipe because one loaf just isn't enough!

Boo hoo, it has shortening which is so expensive here. Maybe I will splurge and try the recipe anyway.
